Spanish forest honey comes from the holm oak, cork oak and oaks that produce honeydew from August to September.
This honeydew is collected by the bees. Honeydew is a kind of sweet secretion from lice on the tree trunks. That is why this honey has the nickname ” lice honey ”. This also explains the nutty flavor.
The honey has a dark color with an intense, powerful and aromatic taste. This honey crystallizes very slowly and therefore remains liquid for a long time.
Forest honey, like all other honeys, is full of vitamins and minerals and looks a bit like pine honey . It is a delicious liquid honey for both the ‘inexperienced’ honey eater and for the real honey lover. This honey is very popular not only in the Netherlands, but also in other European countries.
